Let’s make some Caciotta (an Italian style fresh cow cheese) and Ricotta with master cheesemaker, Brent Zimmerman. During this hands-on class Brent will explain the process and the variables that affect the qualities and tastes of cheeses. Brent will bring cheeses from his farm to enjoy during the class.

Since purchasing a farm in Tuscany, Italy in 1990, Brent Zimmerman has been honing his animal caretaking and cheesemaking skills. Brent is now applying his artisanal cheesemaking craft at his farm in Coxsackie, NY, Lime Kiln Farm, with the milk from free-roaming pastured cows and goats. Brent is the author of Get Your Goat, a book about raising goats.
